Simple Easy Moist Boiled fruit cake Recipe. Guaranteed to impress. My mother used to make the most delicious cinnamon fruit loaf, yummy, moist and it always turned out just perfect. I remember coming in from school and smelling the aroma and could not wait until it was ready. Sitting peering through the cooker glass, willing it to hurry up and be ready.

As winter approaches this is a perfect tea time cake to have to hand for those visitors that pop in over the holiday season.

It is so easy to make and it has never turned out wrong.

My husband refuses to buy shop-bought fruit loaves or fruit cakes.

As even he is a master chef with this delightfully easy recipe.

Yields: Several slices.

Ingredients



 

  • 200 grams Sultanas
  • 250 mls of milk
  • 200 grams sugar
  • 125 grams of margarine or butter
  • 250 grams of self rising flour
  • 1 egg
  • 1 tea spoon of cinnamon optional
  • Set oven to Gas mark 4 / or 180 to heat up.

Instructions

  1. Put the Sultanas Milk and margarine and sugar into a large pot
  2. Bring to the boil stirring continuously
  3. Once it is boiling. Take off the heat and leave to cool for around 10 minutes.
  4. Add the flour.
  5. Mix well.
  6. Add Egg.
  7. Mix all together until you have created a smooth consistancy and when at rest, small air bubbles will start to appear in the mixture.
  8. Pour into a greased 1lb loaf tin
  9. Put into your preheated oven 180 for an hour.
  10. Remove from oven, and leave to totally cool in the tin. This helps to finish off the cooking process of your loaf.

  • Set oven to Gas mark 4 / or 180 (160 Fan oven) to heat up.

  4. Add the flour
  5. Mix well.
  6. Add Egg

Notes

Ensure the boiled sugar, milk, and fruit is completely cooled down before continuing the next steps.

Make sure the Loaf is completely cooked through by inserting a clean knife into the center of the loaf and if it comes out clean the loaf is ready.

Best served the NEXT day with lots of butter and a cup of Tea.
